Hakka Stuffed Tofu .. 客家酿豆腐



This is a must have dish in my hubby's house for Chinese New Year. I remember when we are seeing each other time (not married yet ;) ) when I was invited to his house for New Year dinner i sure see this dish. This is one of my favourite other then the Braised duck with blue ginger (galangal) and soy sauce, Roasted 5 spice chicken, Braised pork trotter and etc..:D
Now this 'hakka stuffed tofu' is my boys' favourite.

这是一道百吃不厌的一样菜肴. 每每被邀请到夫家吃饭(当时还没嫁给他:p)都有好多好
吃的菜肴, 像这道酿豆腐, 还有卤鸭, 香菇焖猪蹄, 五香炸鸡等等
到今天这道酿豆腐也是我家宝贝们的最爱.
This is my homemade tofu..这就是mui家的自制豆腐了.
A nice and soft silken tofu will give you a nice and delicious stuffed tofu 'yong tofu' You can make your own tofu, here
如果有香滑的豆腐,你肯定可以酿出好吃的酿豆腐噢! 可以尝试自己做豆腐,

 Use a pair of chopstick to snip open a little line in the tofu. The rough surface made by the chopstick in the tofu, will hold the meat stuffing nicely. Do not use a knife to cut, the cut by a knife will be smooth and will not hold the meat stuffing nicely. The meat stuffing might drop out while frying.
用一双筷子把豆腐夹开再把馅肉酿入是最理想的. 这样酿入的肉当拿去炸时,肉不容易掉出来.



 Start stuffing the meat into the slit, a little at a time...
慢慢一点一点的把酿肉塞进豆腐.



When the stuffing are filled up, wet your fingers and pat on the stuffing to slight bid the stuffing onto the tofu..当馅肉都塞好了, 就用手粘点水, 把酿好的馅肉按紧, 按滑!


After finished doing the stuffing, it is time for deep frying the stuffed tofu. When the oil is hot, add in the  suffed tofu with the filling facing down. Doing this will let the stuffing cook evenly..当豆腐酿好就可以炸了..先把油烧热再把豆腐放入炸至金黄色. (豆腐下锅时把揉馅的部分向下, 先炸. 这样可让馅肉能熟透)

Stuffed Hakka Tofu
recipe: adapted from my mil's 

Ingredients:
8 pieces tofu (slice into half **pic. a)
some local lettuce

Stuffing:
300 gm pork shoulder meat (mince)
3 shallots..chopped
2 cloves garlic..chopped
1 tbsp dried shrimp..washed and chopped
1/4 tsp five spice powder
3/4 tsp salt
1/2 egg..lightly beaten
1-2 tbsp of water

To do:
  • Add all the stuffing ingredient into a food processor. 
  • Pulse a few times to let all the stuffing ingredients to combine well. When you see the stuffing is gluey and sticky then it is ready. (Do not pulse to long because we do not want the stuffing to become paste. We want a bit of chunky (meat piece) in the stuffing. This will add more texture when eating.)
  • Start to stuffed the stuffing into the tofu.

  • Heat up some oil to deep frying the stuffed tofu.
  • When it is cooked and golden colour, dish up, drain and serve with local lettuce.

  17. glad to have found your blog through sonia's round up - i'm part hakka and i always find it very interesting how different hakka people prepare the stuffing! my mom's uses fresh fish paste too, but the addition of shrimp sounds really yummy!

Shark Fin Dumpling ~鱼翅饺

This Shark Fin Dumpling (yu chi gow), is one of my favorite dumpling. Although it is named Shark Fin Dumpling, but they contain no actual shark fin in it. Some say the look and shape of the dumpling does look like shark fin and other do include in imitation shark fin, though. I am lucky to have spotted this long hibernating in the book shelf chinese dim sum book ‘香港地道小吃’ translated as 'Hong Kong Authentic Tapas' Well, Do, you find this look like Shark's Fin?? 看看形状像不像鱼翅呢??  Filling for the ingredients are prawn, mince meat, carrot, yam bean and black fungus. Steam Lapis Bumi Cake ~ 蒸咖啡千层蛋糕

This little rose cake you see here is the last tablespoon batter of my steamed coffee layer cake. After i finished steaming the layer cake there is still some batter left but no enough to cover the cake so i took a silicone rose mould and make it into this..:D This is a very rush steamed coffee layer cake. It is also named Steam Lapis Bumi Cake. I am crazy to make this 3 hours ago..:p but i wanted to share this because this cake is simply really delicious. My apologize for this is not a very handsome looking layer cake..:p Lapis Bumi/ Coffee layer cake recipe from : my sister connie Ingredients A: 450g butter B: 10 eggs C: 388g condensed milk (i reduced to 300g) 300g Kaya (i used Glory brand) D: 270g plain flour 200g Horlick E: 5 tsp instant coffee powder add 2 tbsp warm water to diluted (i added 6 tsp with 3 tsp warm water) To do: 1) Beat A till pale and fluffy.
